Well, actually – no! Concentrate Apple Juice can just be a thick sweet liquid, but our Bittersweet Apple Juice Concentrate is much more than that. We produce single varietal apple juice concentrate, using apples from our cider orchards, picked at their optimum to provide the best quality, high integrity bittersweet apple juice concentrate available.

The cider apples used for our concentrate are Dabinett apples. Dabinett is a British cider apple variety, which dates from the early 1900’s with small, green fruit and aromatic flesh. It is very different to the eating apples that provide most of the world’s juice and apple concentrate.

Our business began when we saw the possibility to provide a high quality, high integrity product to the cider market but we believe that our product has uses beyond cider and should be of great interest to you as a new, unusual and unique product that can be added to your range of ingredients.

The concentrate has great ingredient potential – it can introduce a bittersweet juice or puree option for chef’s recipes. The concentrate is characterised as having high tannin and low acid with a consistency similar to pomegranate molasses that gives an even coating quality when poured. As a concentrate, it has an intensity of flavour, but because of the bittersweet nature from the fruit used, the intensity has a rounded complexity that comes through with overall mouth-feel typified by “umami” qualities. It will also provide a natural golden caramel colouring.
